The city’s thriving culinary landscape has been recognized by three prestigious culinary guides: Gault & Millau UAE, Michelin Guide Dubai and the Middle East and North Africa’s Top 50 Restaurants.
Chefs at Dubai’s leading restaurants combine cuisines, styles, and ingredients to create original concepts that reflect the city’s unique position as a cultural melting pot. As part of the Dubai World Cuisine movement, these chefs will be promoted at this year’s Gulfood and in the years to come.

During this year’s celebrity chef feature Top Table, curated dining experiences from the world’s best chefs will showcase their signature dishes in a series of captivating masterclasses at the massive new bespoke lounge Gulfood Plus, under the Dubai World Cuisine concept and shows.

Dubai World Cuisine hosted 7 iconic world chefs, 5 from Singapore and 1 each from Norway and Italy, at 6 restaurants in Dubai in February for after-hours dinners around the city. The initiative will host and cooperate with another chef for one night only, offering a menu not seen before.
A holistic culinary experience begins with engaging chefs’ master classes and ends with unique 4-handed tasting menus prepared by the chefs.

Dubai World Cuisine, a movement that promotes culinary excellence by linking Dubai with other international culinary hotspots, will include collaborations between Dubai chefs and Michelin-starred chefs from Singapore. The multicultural culinary scene in Dubai has made it a natural partner for the opening year of Dubai World Cuisine.

In 2023, Gulfood launched a new initiative aimed at helping the food and beverage community make a shift towards more sustainable and resilient food production and consumption. On the road to COP28, we aim to increase visibility and influence key strategic food industry champions for sustainable food systems transformation.

As part of the initiative, Gulfood also has its own Gulfood Global Forest, a tree planting campaign that helps to protect, restore and grow trees for the benefit of climate change around the world. A major source of carbon emissions is the food industry, and the Gulfood Forest will allow attendees, speakers, chefs, and the wider audience to help restore global forests through the planting of trees. As part of the Gulfood Green initiative, fruit-bearing trees have already been planted in four countries: the UAE, Uganda, Ecuador, and Indonesia, so that families and local communities can become self-sufficient. Throughout their lives, trees planted already will support 2,000 families and sequester 1 million kg of carbon dioxide. By COP28, Gulfood Greens plans to quadruple tree planting and expand into new countries.

The theme of sustainability will be carried across multiple verticals at Gulfood, including achieving zero food waste and making the dairy industry less carbon-intensive. Speakers include Paul Newnham – Executive Director of the SDG2 Advocacy Centre; Kylie Woodham – Managing Director of Magners Farm; and Kamesh Ellajosyula – President of Olam Food Ingredients and Director of Innovation and Quality. Gulfood will also highlight for the first time global chefs pioneering biodiversity in the restaurant industry through sustainability initiatives: Rasmus Munk and Peeter Pihel of Alchemist in Copenhagen, sustainable restaurant advocate Fotografiska ‘s Head Chef.

Gulfood Green Awards will be held this year to recognize excellence in sustainability and promote green best practices in the Food and Beverage Industry. The awards will be given out in five categories: Green Food Service Industry Award, Waste Management Award; Green Food Innovation Award; Sustainability Specialist of the Year and Sustainability Company of the Year.

Gulfood will be a platform for companies in the food industry to present their products, services and solutions to influential buyers from around the world. More than 10,000 meetings have been scheduled and approved through the show’s meeting schedule–and that number is growing every day.
